Appalachian Gap Ridgeline Barrel Aged Vermont Whiskey

Production: We start with a mash of 45% barley, 30% corn, and 25% rye. Double distilled, it is then aged in ex-bourbon barrels, new American oak barrels, and port wine barrels. The three different barrels give us three distinct whiskies, from which we prepare batches — each slightly different — based on our distillers’ taste. Nose: Cedar, mint, dried fruit, with notes of vanilla. Palate: Opens with crisp autumn fruit notes that gain spice and warmth on the palate, developing flavors of dried fruit, vanilla, and leather and tobacco notes like a fine old red wine, with a lingering sweetness and hint of char. The finish is warm, with sweet spice and nutty notes followed by a clean burn.
